It's a big brewing world out there, make sure you see as much of it as possible! Australian Sparkling Ale is one of those mysterious beer styles that a lot of us had never sampled (or even heard of, really). But its light, easy-drinking body paired up with delicious hop-forward flavors and aromatics make it an outstanding, sessionable brew. Pilsner dominates the malt profile with a dash of White Wheat and Carapils for body and mouthfeel, allowing the hop combination of Galaxy and Strata to really pop. Similar to how the best view of the Milky Way is on a moonless night in the Outback, these hops are on gorgeous display as post boil and dry hop additions, with very little bitterness to cloud the citrus, tropical, and cannabis character they impart.

Symons Galaxy was first brewed at Imperiale Beer Project in Brentwood, CA as part of a virtual collaboration with Australian beer historian, Peter Symons. Who better to have at your side (albeit through the computer screen) than the gentleman who literally wrote the BJCP guidelines for the style? This collaborative effort resulted in a unique, modern take on the ASA style—introducing Strata, a non-Australian hop, into the mix to complement the heavy additions of Galaxy hops.
